- The new Asparagus season is just starting here, so a topical recipe for you.

- Starter for four
- 2lb Aparagus
- 0.5lb Brie (mature as you like)
- 1lb Mature cheddar
- 0.5lb Fresh Mozzarella
- Pepper

- Cut off bases of asparagi(?). Save to make soup with. Boil the asparagus
- (10mins in boiling water). Cover grill pan with aluminium foil. Lie stalks on
- foil. Season with pepper. Cover with slices of brie, season, then cover brie
- with diced cheddar, season, and cover cheddar with grated mozzarella, season
- again. Stick under HOT grill for a few minutes till cheese is beginning to
- brown. Serve hot.

- Haven't tried it with Parmesan topping but might be worth a shot.
